We use only the freshest ingredients, such as fresh fish directly sourced from fishermen's boats on the Itoshima Peninsula and fresh vegetables from Itoshima, and we also put great care into the cooking methods, such as robatayaki (charcoal grilling) and preparing the fish just before serving, to bring out the maximum flavor of the ingredients.
